Any quick ideas for vegetarian sandwiches?

My lunch pretty much always consists of sandwiches.

I've recently gone back to being vegetarian and I need quick lunch ideas. I'm a student who stays up late and wakes up even later so don't have much time for fiddling around :) ...

I'm not a vegan so will eat dairy and eggs. Any suggestions?

  1. Hummus and veggies is always good.

    Peanut butter and jelly (or even almond butter and jelly).

    Veggie deli slices (you can get them from Tofurkey, Lightlife, or Yves) with mustard and veggies.

    If you have access to a microwave, Gardenburger makes Riblets that would probably be good on a hoagie bun.  Or you can heat up a veggie burger and add ketchup, mustard, veggies.

  2. I make "Mock" tuna sandwiches - they are so good (if you used to like tuna I suppose!)

    Just take a can of garbanzo beans and mash them up.  Add everything you used to add when you made tuna sandwiches.  I use nayonaisse, cut up pickle, celery, cherry tomatoes, and some garlic powder.  

    So delish and very easy to have on hand.

  3. Veggie BLT's are a favorite of mine... I use Veganaise instead of mayo (its much healthier for you too) and then crisp up some morningstar bacon strips in a toaster oven so they are slightly crispy and put some slices of tomato and some lettuce on whatever bread you choose... it tastes AMAZING.

    Also, I am a big fan of doing a pesto layer, fresh mozzarella, roasted red peppers, basil and artichoke hearts... but that is a little more expensive and slightly more time consuming to put together...

    Also, adding avacado to any veggie lunch meat sandwhich makes a HUGE difference.

  4. Egg salad, grilled cheese, cheese and tomato, tomato and mayo, pb and j, pb and ricemallow, pb and banana...Try making big batches of things ahead of time and freeze them.  You can do that with veg soup, stew, or chili.

  5. felafel, lettuce and chilli sauce is a personal favourite of mine.

    some times i like to put feta cheese inside my sandwich it tastes different but i really like it

  10. I'm not a vegetarian, but I do love some vegetarian foods. Here are some that I like:

    - peanut butter and jelly

    - peanut butter and banana

    - peanut butter and apple

    - hummus, lettuce, tomato, onions, carrot, pepper, cucumber

    - fat free refried beans, crunchy lettuce, tomato, onion, salsa, cheese(opt.), in a tortilla instead of bread

    - tomato, basil, fresh melted mozzerella

    - grilled cheese

    If you wanted to replace the peanut butter with other nut butters like almond butter, cashew butter, soynut butter, etc. then you could. If sandwiches get boring try switching up the bread to tortillas, wraps, pita pockets, bagels, english muffins, rolls, etc. Hope I helped :)

  11. good sandwhiches for veg. are tomato sandwhiches and they are delicious, also i have an occasional cheese sandwhich and it is not bad at all, also lettuce and tofu are good for sandwhiches

  12. I love hummus on sandwiches.... either as a spread, or alone:)  Try it with sliced tomatoes & alfalfa sprouts, maybe add some sliced avocado.   Sliced hard-boiled egg sandwiches (good with just butter on toast) ....

  13. There's this lunch meat called Tofurky. It is vegetarian.  It's really good on whole wheat bread with lettuce and cheese and sometimes spinach.

  14. Base spreads or butters: Peanut, sesame/Tahini, cashew, almond, hommus, shredded mozzarella, cream cheese, Swiss cheese, mashed banana, a dip e.g. Babaganoush

    sprinkled Parmesan on rice cakes or microwaved

    poppadums, shredded carrot and raisins, dates

  15. I usually get Boca Chicken Patties, heat em' up, cut them into strips, place on whole wheat, and eat! You can add lettuce and tomatoes........

  16. You can grill vegetables and put them on a sandwich with some type of sauce or dressing.  Example: Grill zucchini, tomatoes, mushrooms and put them on wheat bread with tahini sauce. Cheese is optional.

    My favorite sandwich is a grilled or broiled Portabella mushroom cap, with horse-radish sauce, and sautteed  cremini mushrooms and spinach on whole wheat.  Cheese is obcourse optional.

    edit- I forgot to mention something else.  You can also buy or make the submarine type bread put vegetables on it and then place chick peas or lentils in a sauce on top of the veggies. Look for Tasty Bite packages in health food stores, whole foods, etc.  That's a really quick and tasty protein topping to use on a sub.

  17. You get two peices of bread and put mayo and mustard on each one. Then you get lettuce and tomatoes and put them on top. You fill the sandwhich up with ham, turkey, bologna, chicken strips an dont foget the bacon.
