Cake & drink for an anniversary (diabetic)?

It's my parents 30th wedding anniversary next week, they have asked me to just put on a little buffet and invite close family to the house which is fine but Dad is diabetic and i dont know how to make a diabetic cake, neither do my parents.

so can anyone give me any recipes for cakes, big or small?

also recipes for icing etc to decorate it with.

Also is there such a thing as a diabetic alcoholic drink such as a whisky or rum?

I know you can get diabetic wine but he doesn't like that.

  1. Any cake recipe using sweetener instead of sugar or honey, and avoiding dried fruits will be good.  Make sure you get a sweetener that is not made from sugar - some of them are made of sugar.  I use Canderel.  Dried fruits tend to have more concentration of sugar than fresh fruits (fructose) and honey, though natural is also high in sugar.

    As for the icing, I should think you could whip up butter or marge with canderel and a few drops of flavouring, or coffee.

    Diabetics can drink alcohol in moderation, but need to make sure they eat plenty of carbohydrates (not sugar) to avoid hypoglycaemic attacks which are more likely after too much alcohol.  He may need to reduce his insulin if he is insulin dependent a little to counter this.  But he may need to consult his diabetic nurse to be sure.

  2. Make a box angel food cake, slice down the middle and put sugar free vanilla pudding, with fresh fruit of your choice (strawberries are good), then cover with sugar free cool whip and then decorate with fresh fruit.

    There is no diabetic alcohol.  Alcohol needs to be counted as a carb.  This as you might know will drop blood sugar.

  4. Carrot Cake-Diabetic RecipeIngredients

    1/2 cup grated carrot

    1 1/4 cup chopped dates

    1 cup raisins

    1 1/3 cup water

    1/4 cup applesauce,unsweetned

    1 tsp cinnamon

    1 tsp ground cloves

    1 tsp nutmeg

    2 cup whole wheat flour

    1 tsp baking powder

    1 tsp baking soda

    Directions

    Preheat oven to 350 F. Place the carrots, dates, raisins, water,

    applesauce, cinnamon, cloves and nutmeg in a saucepan, bring to boil,

    reduce the heat, and simmer for 5 minutes. Cool. Stir the dry

    ingredients together. Combine the wet and dry mixtures and stir until

    well blended. spoon the batter into an 8x8" nonstick cake pan and

    bake for 45 to 50 minutes. VARIATION: You may add 1/2 cup chopped

    nuts to the wet ingredients before combining with the dry.

    Makes 1 cake.

    diabetic punch

    1 liter diet Sprite

    1 (46 oz.) can chilled unsweetened pineapple

    1 package blueberry Kool-Aid with Nutrasweet



    Recipe Instructions:

    Chill all ingredients and pour in punch bowl and serve.

    Servings: 4
