Can Americans work in the EU?

I'm a French-Russian-English-Hebrew speaking American with degrees in Political Science and Russian (Native English speaker). Is it possible to apply for a position with the EU without being born there?

I think you have to have a work permit, id say youd get one easy.

Yes, but you need a work visa.

Yeah, of course it is possible. You could probably seek a position with the UN or some such organization, in Geneva, Switzerland, for example.

You'll simply go through the ordinary channels of employment-based immigration.

The process may be a little different if you were to work for an international organization, but regardless, you absolutely can work in the EU.
