Thirsty, compared to what? I don't know of any evidence that seagulls consume any more water for their body weight than other birds. In fact, despite the common usage, "seagull" many gulls don't even live on or near major bodies of water. Sadly, garbage dumps -- even ones far inland -- are the most certain place to find gulls these days.

Regarding Audouin's gull - I would not use just the word "Audouin" without gull as you will confuse your reader.

The gull is thirsty.

They are thirsty for water.
