Carrot cake question?

im making a carot cake, and i want to make the actual cake today, and frost it tommorow- will it keep okay overnight? i dont want it to dry out, so should i keep it in the fridge wrapped up? or out on the counter wrapped up?

BTW.. i live in Colorado (very dry here) AND it will be whole wheat

  1. I sure hope you didn't use ALL whole wheat flour, or it's going to be VERY dense, and won't rise well.  Carrot cake is moist, so it will stay fresh until tomorrow.  Wrap it well in saran and put in the refrigerator.  It's easier to frost when it's cold anyways.....  Bakeries always make cakes days in advance for wedding cakes, and carrot is a popular type of cake to use.....


  2. If you don't have a tupperware or rubbermaid airtight container, wrap in in aluminum foil or plastic wrap and put it in the refrigerator.

  3. Aluminum Wrap should do. Just put it in the fridge. and it should be fine

  4. There is nothing better than fresh baked - that's why bakeries sell "day-old" for 1/2 price.  I don't recommend baking the day ahead unless there is absolutely no choice.  

  5. I actually wrap the layers in plastic wrap and put them in the freezer.  That way, the wrap will come off easily with fewer crumbs when it's time to frost.
