Catering help!!! Hawaiian Theme?

ok im a culinary student who caters on the side. ive been asked to cater a wedding and after party. we have the actual meal covered.

me and my girlfriend are making the cake . thats already drawn out and ready to be baked.

what i need help with is. the after party will be pool side and there looking for easy to eat foods.

we have a bit of bull (its the grooms request and he's cooking it)

im thinking:

crab cakes

grilled pineapple

bbq chicken with a pineapple and mango or papaya bbq sauce

mini strawberry shortcake cups.

any other ideas? thanx spc. hayes

  1. Spam?  I've been to Hawaii at least 15 times (my husband was born there), and I've never seen anyone eating spam!  Sushi, yes - spam, no ......   How about fruit kebobs stuck into whole fresh pineapples?  They'd be decorations then too.  Or, hollow out a watermelon, and fill it back up with cut-up fruit.  Or, make a tropical fruit salad of mango, papaya, guava, banana, starfruit ......   You could also have some dishes of hunks of fresh coconut (most people have never tasted it) .... and don't forget MACADAMIA NUTS!  Plain, or chocolate covered ......In fact, instead of strawberry shortcake (which has nothing to do with Hawaii), how about a Macadamia Nut pie?

    HONEY MACADAMIA NUT PIE

    1/4 c. honey

    1/2 c. brown sugar

    4 TB. butter

    1/4 tsp. salt

    3 eggs, beaten

    1 tsp. vanilla

    1 c. macadamia nuts, chopped

    unbaked pie shell

           Scald honey;  add sugar, butter & salt; stir until blended.  Add eggs, vanilla and nuts and pour into unbaked pie shell.  Bake 10 min. at 400;  then reduce heat to 350 and bake 30 more minutes.......


  2. If you can do shaved ice that would be real Hawai'ian too. With a rainbow of syrup flavors. Maui onion potato chips or taro chips (you can even buy those in every supermarket nowadays)

    Something with macadamia nuts? Serve a chocolate-macadamia dessert with Kona coffee (iced or hot).

    Are we all invited?

    coconut dessert  (somehow add it to the strawberry shortcake cups

    mahimahi (aka dolphin fish) w/ capers n lemon sauce
