I want to do a wine and cheese pairing; which 3 cheeses would pair best together - Gruyere, Gouda, Brick, Drunken Goat, Robiola Bosina. And what order would they be placed in on the board. What wines would go best with them.

  1. If you are talking about a good Wisconsin Brick I suggest a nice Chianti.  That is my personal choice.

If having a pairing and wine tasting get together I would probably go with the following three: In order

    1. Goat Gouda:  Pair with

--"Petite Sirah", Blackberry and bramble flavors of wine pair well with this cheese.

--"Gewurztraminer", Lite sweetness and good acidity pairs well with the mild mineral flavors of Gouda

*****If it is "aged" Gouda  serve Port

    2. Gruyere: Pair with

--"Riesling" a perfect wine with cheese, especially Gruyere

--others wines you can use are "Sauvignon Blanc", "Pinot Grigio" and "Cinsault"

    3. Drunken Goat: Pair with

--"Rioja", cheese has a mild sweetness which is offset by the earthy spanish Rioja.

  2. Here is a great site for that.  Enjoy!
