Chicken Breast Recipe!!!!!!! Can't Think!!!!!!!!!!!!?

Ok, so I have 3 giant chicken b*****s in the fridge for dinner tonight. I also have a bag of baby yellow summer squash. And I cannot think of what to make with it. I cook all the time so it doesn't have to be super easy. Something a little different would be nice. Possibly with capers (love em!) That or its going to be a salad, quesadillas, or wraps.. but they don't really incorporate the squash. At least not my recipes. haha. I need to use the squash tonight b/c its been sitting in my fridge for a week and tomorrow is meatloaf. I'm more of a potato fan w/ my meatloaf. Any ideas kiddos?

  1. Chicken Roll Ups**** (try turkey!!!)

    Shake boneless skinless chicken breast or turkey cutlets in shake n bake (recipe follows, or buy it from the store)

    Mix 1 Pkg. stove top stuffing (6oz) with 1 2/3 C water & about 1-3 TB butter. Let stand about 5 minutes. (water doesn't have to be boiled, this is to moisten the stuffing, not cook it)

    Spoon over each piece of meat some stuffing. Roll up & place seam side down on foil lined baking sheet. If there is any stuffing left over from stuffing the chicken, place stuffing over the chicken.

    Toss some veggies (squash, carrots, onion, potaotes, peppers, frozen veggies, etc) in Italian dressing (or whatever you like) Place by the chicken, on foil.

    bake 400 F for 30 minutes.

    Fake Shake N Bake

    3TB whole wheat flour

    1 TB wheat germ (found in cereal isle, or at natural health food stores)

    1/2 C bread crumbs

    2 ts sugar

    1 ts salt

    1 ts italian seasoning

    (may opt. add 1 TB olive oil, but I only have 1x)

    Use as shake 'n bake

    place in a pan with 2 TB water & 1 ts butter

    cook on medium for 5 minutes per side

  3. I think it would be great with a whole wheat pasta and some pesto...cube up the squash, drizzle with EVOO and bake a bit...sautee or grill the chicken...and toss it all together with the pasta and pesto sauce...

  4. you should try chicken fillets with peppered sauce, veg and potato or rice and you could include the squash i suppose, i have never tasted it before so i dont no.

    or you could chop the chicken fillets up and cover them in chicken tikka or bbq sauce and put them in wraps with salad.

    or maybe some pasta and sauce with chicken fillets and sweetcorn.

  5. Saute the chicken in a pan, make a dijon cream sauce with minced shallot if you have it.  Serve seasoned, roasted squash on the side with steamed rice.

  6. Chicken breast....here is a good one

    take the chicke breast (bone out) beat it with the side of a saucer, then place (cheese) I like monteray jack, diced tomatoes, and ham pieces roll the chicken breast with the stuff in it look like a swiss roll put in a toothpick to hold, then take egg, milk garlic, salt and pepper in a bowl and mix, dunk the chicken breast in that then batter it with bread crumbs or cracker crumbs, bake on 350 for aabout 45 mins....real good and very different.

  8. Chicken breast is a VERY forgiving meat..Im sure whatever you do to it will be good!

  9. This is my favorite and it will be yours too once you try it. Put your chicken in a heavy freezer bag and beat it until the chicken spreads out in the bag, then put in Balsamic Vinegar, or teriyaki sauce in the bag and slap it around some more hahah,  (try with rice and squash, like a stir fry.) Whatever your tastes buds like.  I would cook the rice separately, fry the squash in olive oil only separate, just long enough to brown, and fry the chicken in O.Oil only.  Not all in the same pan or your squash will be too over cooked.  Besides you don't want to mix raw chicken with fresh squash.  so wash hands carefully inbetween handling raw chicken and veggies.

    If you want to fry it, do the beating, then cover with Italian bread crumbs and fry lightly 4 mins on each side, take off heat, and put chicken in a plate to set for at least 5 mins or longer, but not much so the juices return to the chicken and it will cut with a fork!

    We love chicken cooked like this.  hope you do too!

  10. Grill the chicken b*****s whole to completion

    Cut into halves so three becomes six

    Slice or grade swiss cheese over halves, sliced side up.

    Mix in capers before or after cheese

    Broil until cheese becomes 'bubbly' and slightly browned. (approx four minutes)

    Serve with squash and starch (potato or rice)

  11. try Pesto Chicken with summer squash

    Ingredients

    4 meduim boneless skinless chicken breast halves

    2 tablespoons homemade/purchased pesto sauce

    2 cups finely chopped zucchini or summer squash

    2 tablespoons finely shredded asiago cheese or parmesan cheese

    1 tablespoon olive oil

    Directions

    1In a large nonstick skillet cook chicken in hot oil over medium heat for 4 minutes.

    2Turn chicken; add zucchini and/or squash; cook for 4 to 6 minutes more or until the chicken is tender and no longer pink.

    3(170degrees) and the squash is crisp tender, stirring squash gently once or twice.

    4Transfer Chicken and squash to 4 dinner plates; spread pesto over chicken; sprinkle with Asiago or Parmesan cheese.


  12. When I worked at the local country club, my mom(the chef, lol) used to take chicken, dip it in a seasoned egg wash, sprinkle with capers(small ones), and pan fry it in butter. I believe they used to serve it with a almondaise or hollandaise type sauce. People loved it.

Grill the chicken, and while that's cooking, make some rice, and a nice side of squash.  Saute some onion, garlic, and tomato, add the squash, and capers, a little hot sauce, and let it cook till it has some body - let most of the water cook out of the veggies - it's a nice "succotash" that you can add anything to...  green peppers, carrots...

    For your rice, try browning some butter in the pan, adding the rice, and coating the rice in brown butter, then add some stock, and let it cook for the 20 min.  It's got such a wonderfully nutty flavor - something that's really good, and unexpected.

  14. cut the chicken breast into nice chunks (off the bone or on?) season it with salt, pepper, paprika, basil, and parsley. Take the chicken and place in in some really hot vegetable oil till it cooks thourougly and gets golden brown on the outs. Don't over cook...gets too tough. then take the squash peel it, chunk it, salt it, fry those puppies up. get you some nice greens ( romaine, iceberg, arugala,..) add some crisp green beans, and some sesame sticks...use a savory or sweet dressing...it's delicious.

  15. Barbecued Chicken Kabobs with Potatoes and Summer Squash

    Ingredients

    Makes 8

    1 1/2 chicken b*****s (3 halves), cut into 1-inch cubes

    Spicy Barbecue Sauce

    1 cup water

    1 1/2 tablespoons coarse salt

    1 1/4 pounds new or baby fingerling potatoes

    3/4 pound green or yellow summer squash (about 2),, cut into 1-inch pieces

    2 tablespoons olive oil

    1 teaspoon freshly ground pepper

    Directions

    Place chicken in a large bowl. Add barbecue sauce; toss. Cover, and refrigerate for at least 30 minutes or overnight.

    Place the water in a large saucepan. Add 1 tablespoon salt and potatoes. Bring to a boil over high heat. Reduce heat; simmer until potatoes are almost tender when pierced with a knife, about 10 minutes. Do not overcook. Drain; halve. Set aside.

    Thread 4 cubes of chicken, alternating with potatoes and squash, on each of 8 skewers. Gently brush vegetables with a little olive oil. Season with remaining 1/2 tablespoon salt and the pepper.

    Arrange skewers, off direct heat, on a medium-hot grill. Grill, rotating skewers and brushing with olive oil as necessary to prevent sticking, until cooked through, about 12 minutes depending on heat of grill. Vegetables should be soft and slightly charred. Serve with choice of condiments.


  16. I would just cut it up in small pieces, some season salt, cooke with onions and then throw the squash in ontop ..cook it all up and throw it ontop of some lettuce.
