Use multiple devices (such as flash drives or SD cards) at one time to backup data from my ps3?

You could if you saved the various files individually i.e. this file here, that file there etc. Using the actual backup utility would require ONE designated location to store the info.

what i would recommend is use an external hard drive thats bin formatted to FAT32 and you can back up all your files to the external hard drive.. or even run a back up utility..

(if you do get an external hard drive for fat32 or use SwissKnife software to change from NTFS to FAT32, make sure the folders are Picture, Music, VIdeo and Game under a Playstation 3 Folder)
