Question:

Cupcake help! How much milk?

I am using a recipe from a recipe deck called Cupcake Confidential for Cookies and Cream Cupcakes. The ingredients are listed as follows:

1 3/4 cups flour

2 tsp. baking powder

1/2 tsp. salt

1/3 cup margarine

3/4 cup sugar

1 egg

1 tbsp. grated orange rind

1 tsp. vanilla

5 chocolate sandwich cookies, coarsely broken up

In the following instructions you are supposed to mix the flour, baking powder, and salt. Then beat the margarine and sugar together. Next is the problem: it says to alternately beat the milk and flour mixture in. There is no milk in the recipe! Does anyone know how much I should add in? Looking at other recipes it is probably between 1/2 cup and 1 cup. Also it should make 12 cupcakes. Help!

  1. I agree with your guess, from looking at the quantities I would start with about 3/4 of a cup of milk and see how sloppy it is...be cautious - you don't want it too liquid.

    You can't do horribly wrong with 3/4 of acup and see how they turn out and add a little more next time if they're too dense.

  2. i would probably start with 1/2 c. that should be about right...but if the batter is too thick you could always add a little more at a time until it gets to the right consistency...
