DVD burning please help!!!!!

ive been burning dvds for the past 2 weeks, and for some reason, on most videos, the actual movie is about 3 inches smaller than my tv screen, and the audio is higher pitched. any way to remedy this? also, whats a good program for burning dvds and creating dvd menus? (ive been using windows dvd maker) thanks so much
