  1. After you pick the sage - wrap the stems in an elastic band hang it upside down on a hook where it does not touch anything in a dark place where there is very little or no moisture.  After a few weeks it should be dry - if it  is brittle to the touch. Then store it in a clean paper bag. take out a little at a time when you need it for a recipe. Just rub the sage into your cooking.  Sake is meant to be used quite scarcely.  A little goes a long way to give flavour to foods.  I use mine in poultry stuffing and a few shakes in my  "Tourtiere".

It should not be too tall about 3" is good.

  2. Keep the weeds out of it.

It will blossom and then start to dry out.

Do not let it dry out completely then pull it out, roots and all. Remove the root mass and put the rest into paper bags, one stalk per bag and hang in a place where the sage can dry out.

Once the sage has dried to the point where the leaves are falling off, shake the bags and / or press the bag together so the rest of the leaves come off.

Remove the sage from the bags and store in jars. Throw the stalks away.

Enjoy the fruits of your labour!!
