  1. Here’s one I make a lot because it's quick, easy and tasty.

1 bundle Green onions - cut to ~1" pieces

1 white or yellow onion (small) - cut to ~1" pieces

1 bell pepper - cut to ~1" pieces

1 Sirloin steak (other lean cuts will work) - slice ~1/8-14" thick, ~1"x1" squares.

1/4 pound Swiss cheese - grated or sliced

1/8 pound feta cheese - crumbled works best

1/4 pound white cheddar - grated

4 hoagie rolls - pre-sliced, fresh, homemade, doesn’t matter.  I like whole wheat

1/4 stick of butter - margin works too, or 2 TBS of olive oil.

Melt butter into pan (cast iron pitch here); add white onion, green peppers, and green onion.  No need to dice or finely chop.  Allow to start caramelizing onions (they'll get softer and brownish) and add sirloin and allow to brown.  Add some salt and pepper (to taste)

Lay rolls open on a cookie sheet and put cheddar down.  I like to lightly butter the rolls.  When the meat is browned, put meat and veggies onto rolls, add feta and Swiss.  Place rolls (still open face) in the oven until Swiss cheese is melted at 300 on broil.  Wipe down cast iron skillet, and place on burner not used to cool.

Remove from oven, Close sandwich into sandwich form, place cookie sheet in dishwasher (or brush crumbs off and put it back in the cabinet)

Eat and place plate in dishwasher.

It's really good served with she crab soup, or even just a bag of chips.
