Healthy cookies help!!!!!!?

My sister and I are catering for our mothers gym/motovational health speakers party. We have to make really really healthy things since these are the really healthy people that go to the gym. (our mother is also really healthy shes 50 and looks like a 35 year old )

We have all the other food planned out but we need one more dessert. Our mother wants us to make healthy chocolate chip cookies (ok, the chocolate wont be healthy but thats ok) does anyone have a recipe for super super healthy chocolate chip cookies? without using butter and so much sugar??? and they still have to taste good.

  1.    Chocolate Chip Granola Bars

    4 cups of  oats

    1/3 cup  canola oil

    2/3 cup honey

    1 teaspoon  vanilla extract

    1/2 cup chocolate chips

    1 cup chopped nuts

    Preheat oven to 350°F.

    Spread oats into an un-greased cookie sheet. Bake for 15 minutes, stirring a couple of times. Allow oats to cool to room temperature. Combine remaining ingredients in a large mixing bowl. Add cooled oats. Spread mixture into a 9x13-inch baking dish that has been sprayed or oiled, pressing down hard to compact it.

    Bake for 25 to 30 minutes, or until golden brown. Cool completely and cut into bars.

  3. Healthy Chocolate Chip Cookie Recipe

        * 1 cup whole wheat flour

        * 1 cup oat flour

        * 2 tsp. baking powder

        * 1/2 tsp. salt

        * 1/4 tsp. nutmeg

        * 1/4 tsp. cinnamon

        * 1/2 cup butter, softened

        * 3/4 cup brown sugar

        * 1 egg

        * 1/4 cup nonfat milk

        * 5 oz. Ghirardelli dark chocolate chips (or your favorite bittersweet chocolate chips)

    Preheat oven to 350 degrees. In a medium bowl, stir together flours, baking powder, salt, nutmeg and cinnamon. In a large mixing bowl, cream the butter and sugar together until light and fluffy. Beat in the egg, then the milk. Stir in the flour mixture. Stir in the chocolate chips. Drop by rounded teaspoons onto cookie sheets. Bake 12-14 minutes or until browned around the edges.

    Makes 36 cookies.

    Per cookie: 88 calories, 4 g fat (2 g saturated), 14 mg cholesterol, 13 g carbohydrate, 1 g fiber, 1 g protein, 1% Vitamin A, 0% Vitamin C, 3% calcium, 3% iron

  4. 2 egg whites

    # 3/4 cup white sugar

    # 1 cup chopped pecans

    # 1 cup semisweet chocolate chips

       1. Preheat oven to 350 degrees F (175 degrees C).

       2. Beat egg whites with an electric mixer until soft peaks form.

    Gradually add sugar and beat until stiff peaks form. Fold in the pecans and chocolate chips. Drop by teaspoonfuls onto a prepared cookie sheet. Put cookies into the preheated oven and turn off the oven, keeping the door shut. Do not open the door until the next morning. Then the cookies should be done. It is best to do this at bedtime so the waiting is easier.

    Yield: 1 dozen

    These are called Nitey Night Cookies because you put them in a preheated - but turned-off oven - overnight, and when you wake up, they're ready to eat! My mom used to make them for me as a kid and I thought it was great fun.


  5. Tahini Oatmeal Chocolate Chip Cookies

    (from EatingWell March 2005)

    2 cups rolled oats

    1/2 cup all purpose flour

    1/2 cup whole wheat flour

    1 tsp ground cinnamon

    1/2 tsp baking soda

    1/2 tsp salt

    1/2 cup tahini

    4 tbsp butter, softened

    2/3 cup granulated sugar

    2/3 cup packed light brown sugar

    1 large egg

    1 large egg white

    2 tsp vanilla extract

    1 cup chocolate chips

    1/2 cup chopped walnuts (optional)

    Preheat oven to 350F and line baking sheets with parchment paper.

    Whisk together oats, flours, baking soda, salt and cinnamon in a medium bowl.

    Beat tahini and butter together until blended. Add sugars and beat until well combined. Add in egg, egg white and vanilla until thoroughly combined. Stir in oat mixture until nearly incorporated, then add in chocolate chips. Do not over mix.

    Drop dough by tablespoonfuls onto prepared baking sheet.

    Bake for 10-12 minutes (or 15 minutes for a crispy cookie), until golden brown at the edges.

    Remore to a wire rack to cool completely.

    Makes 4 dozen.


  6. Healthy Chocolate Chip Cookies

    Ingredients:

    1/2 cup sugar

    1 cup whole wheat flour

    1 1/4 cups oats

    1/3 cup milk

    1/2 cup olive oil

    1 egg

    1/2 teaspoon baking soda

    1 teaspoon cinnamon

    1/2 teaspoon nutmeg

    1 cup semi-sweet chocolate chips

    1 cup walnut

    1/2 teaspoon salt

    Directions

    1. Combine dry ingredients.

    2. Mix in olive oil, egg and milk.

    3. Add spices and salt.

    4. Add chocolate chips and nuts.

    5. Bake at 350 for 10-12 minutes.

    6. Enjoy!
