Watermelon Juice

10 min prep

Serves 1

Ingredients

2 cups chopped seeded watermelon

1 cup crushed ice

2 teaspoons honey

fresh mint (optional garnish)

Method

1) Combine watermelon, ice, and honey in a blender.

2) Blend until smooth.



3) Garnish with mint.



4) Serve chilled.

5) Stir well before serving.

Or this one

Watermelon & passionfruit juice

Preparation Time 15 minutes

Makes 1.6 litre(6 1/3cups)

Ingredients

2.4kg watermelon flesh, chopped

185ml (3/4 cup) passionfruit pulp

Ice cubes, to serve

Method

1) Place a third of the watermelon in the jug of a blender and blend until smooth. Strain through a fine sieve into a large jug. Repeat with remaining watermelon in 2 batches.

2)  Add passionfruit and stir until well combined.

3) Cover with plastic wrap and place in fridge for 2 hours to chill. Add ice cubes and serve immediately.

Notes & tips

Prep: 15 mins (+ 2 hours chilling time)

You will need a 4kg watermelon and 10 passionfruit for this recipe.

Ingredients

1 1/2 ounces blanco tequila

3/4-ounce Triple Sec or any orange liqueur

1 cup watermelon juice (use either juice extractor or blender if you remove the seeds)

Watermelon balls, for garnish

Method:

In a martini shaker, add ice, tequila, Triple Sec and watermelon juice. Shake to combine and strain over a chilled martini glass. Garnish with watermelon balls.
