Help with Estofado?

I'm planning on cooking this dish and i have a couple of questions about modifications. Can i substitute the bananaa with plaintains, can i reduce the amount of garlic, can i switch the pork with oxtails or curried goat or mix em.

Sure you can do all that but you will lose flavor if you switch from bananas to plaintains, you can reduce the garlic but I don't think I would put in CURRIED goat. You can always mix the meats.
