How do I bake Buffalo Burgers ?

The patties are about 1/4" thick- The meat is pretty lean- Time & Temp in the oven. Do they need to be turned at all?

  2. BUFFALO BURGERS  

    2 1/4 lbs. ground buffalo meat

    1 c. bread crumbs

    2 eggs

    1 tsp. salt

    1/2 tsp. pepper

    1 tbsp. Worcestershire sauce

    1 tsp. basil

    1 tsp. paprika

    In a large mixing bowl, blend together buffalo meat, bread crumbs, eggs and seasonings. Shape into patties. Broil over a charcoal broiler to desired doneness.


  3. Because Buffalo burgers are so lean, I always put them on a metal tray, season them, and put them in the preheated oven on 400º.  I do 10 minutes, turn them over, and 10 minutes again.  Then about 1-2 minutes but no more under the broiler and they will be perfect.  The 400º doesn't remove all the moisture like broiling them until done would.  Same with the BBQ.

  4. Cook them slowly, but thoroughly. The higher the heat, the tougher the meat. They are very low fat, but very sinewy, so prepare to chew a lot and floss the sinew out of your teeth!
