How do I monitor outgoing emails?

There is an employee abusing her email privileges, and her boss asked me to try to find a program that would automatically forward a copy of every outgoing email to her without the employee being aware of it. We use MS Outlook for email. We already have a program that intercepts her incoming mail, but outgoing does not show up. We do NOT run our own email server. (pop3 mail)

We've already messed around with keystroke monitors (what a mess) and do have a monitor for that, but if we want to use this data we have to wait for her to leave to check it. Is there a program that would help out in this situation that I could purchase or download?

  3. So its not your own email server, and your trying to get in to her Gmail account?  I am not even sure that is legal..So I would suggest talking to her about using the computer for private use, but I wouldnt try hacking in to her email account.
