They don't. All they do is change color based on body temperature.  They have nothing to do with your moods.

Hot body temperature (excitement, anger, s*x etc) warm colors, cold body (sleepy, tired) cold colors

If you want to know how they function chemically, they are filled with special molecules that change shape as the material slowly approaches a liquid state.  These different shapes cause them to absorb different frequencies of light, and you see a sort of 'average' colour of the many slightly different frequencies they are affecting.  Long story short, they change colour based on the temperature.
