  1. About a year.  After that, it the texture and flavor start to change.  It might not make you sick, but it won't taste as good.  If you open a jar that has been around for a while and it smells weird- I had a few jars left from a batch that ended up in the back of the cupboard that smelled like rubbing alcohol, probably best to chuck it.
