  2. How about the "easy way" to make a delicious garlic puree? Preheat a counter top oven to 400-450F. Wrap several entire heads of garlic in aluminum foil--spray them with pam or brush them with olive oil before you wrap them.

    Put the wrapped garlics into the oven for about 20-25 minutes until you can smell the roasting process. The garlic will be the consistency of soft tooth paste at this point.

    Unwrap the garlics and cut the bottoms off; squeeze the garlic meat out of the shells and mash it with a fork. Grind some--just a little--fresh sea salt on the garlic meats and mash them with the fork. You will now have a roasted, pureed garlic that is incomparable in flavor and aroma.

You can go to a grocery store and buy it.  If you have a  food processor you can make it at home.  Just put some garlic cloves and olive oil into the machine and turn it on.  Start with about a half cup of oil and a handful of cloves, add oil as the mixture seems to be drying up.  make it as wet or dry as you like it.

    Fresh (or dried) thyme

    Simmer garlic, oil and thyme until golden brown.

    Drain the oil and allow the garlic to cool down.

    Mix garlic, salt and suger in food processor adding extra oil as needed until it forms a smooth paste.

    Pureés will give you a stronger flavor from your garlic.

    For a milder taste use minced, sliced, dried or roasted.

    Sauté a clove of garlic and some sage in oil. Add it to a steamed vegetable dish to perk up the tastebuds.

    Preheat 350 oven

    cut at least 3 head of garlic in half

    place cut side down, on a oiled sheet pan, cover with foil.

    roast till soft or 30 min.

    take it out and cool it down a bit before squeezing out the garlic

    puree and season with salt and pepper, maybe a drizzle of olive oil and enjoy!
