Question:

How to pick a good potato?

I know green potatoes and potatoes with eyes are generally not good, but what else should I look for when picking potatoes from the market?

Also, what does it mean when a potato has very small, hard pieces sticking out of the skin? (the pieces are clear and almost as hard as glass)

  1. Just pick a fine looking potato, smooth, cool and even. No soft spots... not even a little soft. Firm and tasty-seeming. Enjoy! I peel a lot of potatoes at work and usually, it's the ones with the rotty spots that are rotten inside, too. :(

    edit: as for the clear glass-like things... no idea. I've never seen them. Maybe it really is glass. Don't eat those ones?


  2. I do it like american idol. I get my family at the table and the potatoes entertain us. Only the best get eaten
