I can not eat too much wheat cos it upsets my tummy. Anyway the other day I ate sri lankan food and they made a gorgeous rice pancake filled with potato and with some lovely dips. I tried to make the rice pancake but it was too greasy and also not the right consistency. Can anyone out there help with ideas on how rice flour could be used?

  1. You are reffering to Dosa. Let me first give you a good dosa recipe.Ingredients:

    Rice flour 1 cup

    Onion finely chopped 1

    Sooji rava(optional) 2 table spns

    Chilli powder 1 tea spn

    Jeera 1/2 tea spn

Coriander leaves finely chopped 3-4 strands

    Salt

    Method:

Mix all ingerdients with water to the consistency of dosa batter. Make thin dosas. Serve hot with chutney powder.

    Serves : 3

    Preparation time : 10min

There's another thing you can do with rice flour.  You can use this above batter by dipping vegetables and frying them. They come out delicious.

  2. The second girl is right however Dosa is a rice and pulse (lentil/bean) pancake, and the batter is made and allowed to slightly ferment, this way the flours absorb the moisture, for a crispy dosa, it is important to have a hot griddle and work fast, with little oil.

If you need more help or advice let me know, there are pre-made dosa mixtures available. And there are steamed dumpling from India made with rice flour called "Ildi" you might find you like to.

  3. You can make it into a dough where it's stretchy.  Then fill it with meats and vegetables like a dumpling and steam it.  Delicious Taiwanese food.
