why does most inflight catering kitchens must operate 24 hours per day and 365 days per?

Because airplanes are flying 24 hours a day 365 days a year.There are flights going out every single day. and partly because when people fly they always want food and something to drink!

There are thousands and thousands of flights every day, 24 hours a day, 365 (366 for leap years) days a year - those flights are going to need some food for hungry passengers.
