  1. In each case you are looking at digesting larger molecules into their constituent subunits.

    Glucose is a simple carbohydrate that is polymerized into larger complex carbohydrates in plants.   Fibrous cellulose and complex polysaccharide starches for food storage are all built up using glucose. Enzymes carry out the process of creating the glucose from water and CO2 then in polymerizing it into starch. The process is fully reversible as the plant can hydrolyze the starch for glucose to fuel its cellular respiration. This process can also be catalyzed chemically to produce sugar for human consumption. It can be partially or fully hydrolyzed with acid or enzymes.

    Protein can also be hydrolyzed into component amino acids. Protein can be heated with acid but some amino acids can be degraded more easily than others since side chains vary extensively. Enzymatic digestion with a peptidase is more reliable and was used in protein sequencing. However many other methods and proteases are also used to cleave residues.

    Plants have amino acid recycling or protein turnover to ensure both regulation of protein activity  and removal of degrading proteins. All eukaryotic cells use an enzyme called ubiquitin for selective hydrolysis of proteins.
