  1. jasmine rice should work, mostly because it's got that nice sticky texture

  2. No. It will fall apart.

You need short grained sushi rice. Buy at the Asian groceries.

  3. sushi rice is best like Nishiki rice. It is a short grain rice (sticky more gluten) that works well with all types of sushi. In Japan they often use a higher grade premium rice (much more sticky and higher gluten protein) which you can find in most Asian markets. It is slightly more expensive, but worth the price if you make alot of sushi at home. It is a whiter and more round grain than most. Long grain or Jasmine type rice will not work well for sushi making. It will not absorb rice wine vinegar well as the short grain sushi rice.
