In skillet melt butter and half that amount of veggie oil (olive is a veggie), make patties and keep them as flat as possible. toss them into the oils in the skillet on medium heat. cover and cook for 3 minutes, turn and cook for another 3 minutes. Should be medium! cut the center of one to see if it is still pink, if so, cook another couple minutes on each side.

    Tropical Hamburger

    1lb ground beef

2 pineapple rings drained and crushed

    1/2 handful grated cheese(equivalent to 4 slices)

A dash of teriyaki or soy sauce(about 2 tablespoons)

a little pepper, fresh ground is better

    1 hand fresh bread crumbs

    1 egg lightly beaten

1 quarter beef stock block dissolved in a quarter cup water

Mix all the patty ingredients thoroughly.

Make sure the mixture is cool. Divide mixture into 4 equal balls and mold into patties

Cook on medium heat under the grill, on the barbecue or in a pan  until the patty is cooked to your preferred degree of doneness or the internal temp reaches 160F.

Split the rolls and toast the cut surfaces lightly (under grill, on barbecue or in pan) just before the patties are done. Spread mayonnaise on the bottom half of the roll, add a thin slice of onion, some lettuce, a slice of tomato, the patty and the other half of the roll.

3 lbs. of 85/15 ground beef

    1 large onion

    2 large lemons

    1 large green bell pepper

    1 clove garlic

1 bottle of bbq sauce "your choice"

Slice onion, lemons, bell pepper and garlic and put them into a crockpot. Add BBQ sauce and enough water to cover the burgers, then set the heat on low. Make beef patties to preferred size, cook them on a charcoal grill until well done. They have to be well done or they will fall apart in the crock.

After the burgers are done on the grill, put them in the crockpot and slow cook them for one hour.

Serve them on a thick bun with a slice of fresh onion and hand cut french fries on the side.

    PICADILLO CRIOLLO (CUBAN HAMBURGER

    SKILLET DINNER)

    2 cloves garlic, minced

    1/2 - 1 lg. green pepper, chopped

    6 - 10 cherry tomatoes, chopped

    2 tbsp. capers

    1 - 2 snack - size boxes raisins

    1 1/2 - 2 lb. lean ground meat

1/2 - 1 tsp. each salt and pepper (optional)

    3 tbsp. - 1/4 c. dry red wine

For sofrito, saute onion, garlic and green pepper in olive oil until soft and golden. Add cherry tomatoes, capers and raisins. Reduce heat, simmer a few minutes. Add ground beef and sprinkle with salt and pepper. Return heat to medium high. Break up the meat and mix it in the sofrito. Brown meat evenly. Reduce heat and sprinkle with dry red wine. Simmer at least 10 minutes. Serve with rice and tossed green salad with a vinaigrette dressing. Black beans or fried plantains would be good accompaniments, but require much more time in the kitchen. Often Cubans serve salad on the same plate and eat the rice, picadillo and salad together. Kids like the sweet - sour flavor! A Cuban dessert would be guava paste, cream cheese and saltines or flan.
