The best thing is *not* just turn up at the airport!  You will more likely save hundreds if booked even just the day before.

Last minute the best thing to do is turn up to the airport and see if you can get on standby. you mightn't get on the day you want but if you've got a few days to spare it is the cheapest last minute option.
