    I make at home fajitas, mexican rice, beans, chicken or steak fajitas.

  4. Tacos and fajitas.  Every now and then I make enchiladas.

  5. ME TOO! Anything spicy and Latin I am there with you, have you ever had home made tortillas, they are awesome. I am not talking about made with flour, hand ground corn tortillas, it makes any meal so much better. :)

  17. Sounds crazy but chicken dorito casserol! Yummy!!!

    i stick of butter melted in bottom of cake pan

    1 bag of doritos crushed and put on bottom of pan over butter

    4-5 chicken b*****s boiled and then shredded over chips

    mix in bowl:

    1 can ro-tel

    2 cans crm of chicken

    1 tblsp chili powder

    1 tsp garlic salt

    1 sm/med onion chopped

    1 bell pepper

    1 cup shredded cheese

    mix and pour over chicken

    top with 2 cups cheese

    cover w/ foil bake at 350 for 30-45 minutes

Our family favorite is a tostada.  Corn tortilla is grilled lightly then cooked chicken is placed on top with some oaxaca cheese till melted.  We use avacado, pico de gallo, sour cream &amp; a small squeeze of  fresh lime juice to top it off.  It tastes like good junk food but the worst thing for you is the sour cream.  It&#039;s really filling too.

    As for more non-traditional dishes I like tacos and fajitas.

  22. i make a mean black bean enchillada!  it&#039;s one of the few things i make well, according to my husband.
