I assume you are not American otherwise your legal choices are Dominican Republic or Mexico. If you are of another nationality you may be able to do Dominican Republic and Cuba on stay overs.

Dominican Republic has a good balance of resort life and local culture. The Spanish is a little fast paced but if you have a half way decent understanding you should get by fine.
