  1. Convection ovens are basically a smaller version of the conventional oven. They are able to warm food faster because the air that would normally surround food in larger oven is stripped away and replaced with hot air which then moves across the food, yada yada yada lol In short, it's faster than convention.

Microwaves on the other hand have a form of radiation called microwave (hence the name) which heats water molecules in the food.

Microwaves would not be my choice for cooking food. I'd rather wait a little longer for the convection oven. The reason for this: When the microwaves heat the water molecules in the food, this causes unnatural reactions to the food particles. This causes alterations to the food that are not naturally occurring. Basically your food goes in one way and comes out a little different. Much quicker, but breaks down your food.

You've noticed how different food tastes after it has been cooked in the oven vs the microwave. Or how food tastes that was cooked in the oven and then later heated in the microwave.

  2. A convection oven uses a regular heating element and swirls the hot air around with a fan to improve heat distribution. A conventional oven just has a heating element.

A microwave oven uses a radio transmitter to heat molecules in the food. Microwave ovens are an efficient way to cook food, but food doesn't "brown" without help.

I rarely use the microwave to cook food outright except for TV dinners. But it's great for leftovers.
