Miso soup help?!?

well i want to make some miso soup(i live in America btw) but i don't know what kind to make. i want it to be vegetables no meat because my friend is vegetarian but no tofu or anything just vegetables. what ingredients do i need to use and the procedure of making it

  2. If you want to go traditional, you'll need to use fish. Otherwise, you can approximate the recipe using various seaweed and mushrooms. Here are my two recipes:

    Dashi (broth):

    1 liter cold water

    15 to 20  square inches of kombu (edible kelp, available at Japanese grocers)

    30 grams katsuo-bushi (bonito flakes. Try to get large flakes with as few dark brown spots as possible)

    Bring the water to boil with the kombu. Just as it begins to simmer, remove the kombu, otherwise the broth will turn bitter. Once a full boil is reached, add the katsuo-bushi and cut the heat. Do not stir. Let infuse until the flakes are completely wet, 1-2 minutes. Strain the broth and discard the kombu and katsuo-bushi.

    Vegetarian "Dashi" (or Kombu-Jiru, adapted from Washoku, by Elizabeth Andoh)

    15-20 square inches kombu

    1-2 dried shiitake mushrooms

    1 liter cold water

    Soak the kombu and mushroom in the water for 2 hours, or overnight. Bring to a bare boil and cook 4-5 minutes. Strain.

    Miso Shiru (Miso Soup)

    1-2 oz enoki mushrooms (optional)

    1 liter dashi

    1/2 block Japanese silken tofu

    1 tbsp dried wakame, rehydrated

    1 green onion, cut finely in the diagonal

    3 tbsp miso (preferably a light miso, like mugi- or saikyou-miso)

    4 rehydrated dried shiitake mushrooms

    Cut the roots off the enoki mushroom, if using. If the miso is chunky, strain it. Mix the miso into an equal amount of dashi, then add to the remaining broth. This makes it easier to dissolve. In each bowl, place a few squares tofu, a shiitake mushroom, and a few pieces of wakame. Add the broth and garnish with the enoki and green onion.

  3. Well miso broth is made with dried bonito flakes so if he's strict vegetarian you can't make it at all. How about a soy-based broth instead?
