Neon Drink/Sprite Question?

I was drinking sprite today in a champagne glass and it bubbles alot. I left it on the table for a few hours and came back and it was still bubbling alot. How could sprite have so much bubbles? Also I seen some articles on how to make your drink like glow neon colors. Like in clubs they make your drinks glow neon colors. Like Neon green. Neon Blue. Neon Purple. What can i use to make the sprite or water or whatever neon glowing and not ruin the taste or smell? That looks cool that's why.
