How does Panera Bread cook the eggs in the egg & cheese sandwiches? Are they poached or fried?

  2. We use a process called "sheering".  

    The griddle is sprayed lightly with a non stick cooking spray, then the eggs go in.  The egg is very slightly scrambled (just to break the yolk).  Then the lid is closed and water is added to he top.  The hot water cooks the egg.

  3. They remind me of McDonald's eggs on a McMuffin. They are fried, but not oily or anything like that and they are thin or should I say more spread out, so you dont get too much in one bite. They are all the way cooked, so nothing is slimy or runny (but if you like them runny, you might be able to ask them to do it that way)

  4. It's called 'sheering' - it's a combination of steam and heat.

    The eggs are cracked onto the heated surface of a specially designed machine, then covered. The cover has two wells where water is poured. The water is converted to steam inside the machine where the eggs are cooking.

    The eggs cook for approximately 2 minutes and 30 seconds then are keep for a short period of time in a pan of water in a heated compartment.
