Does anyone have a good recipe for the famous Greek hamburgers?

Any time I try to make them seems that something is missing.

What is your own secret?

Hi there,    there are a number of different  variations  when it comes to Greek hamburgers,   if you were to fry them you would use leaner mince (lamb or beef) if you were to BBQ or grill them you could use  (pork, lamb ,or beef) make sure that the mince  has about  %25 fat in it,it will make the patties softer and tastier then lean mince , Now here are the  must have  in your  patties,  

    for 1 kilo mince of your choice depending on how  to cook.

    finely chopped continental parsley(fresh) half a cup

    finely grated onion (fresh)     1 large

    fresh mint  its quite strong so use to your taste, finely chopped   i would say  3 table spoons .

    dried Greek  wild Rigani (oregano) lets get something straight, if you don't use it  then don't bother making this at all because  your missing the key ingredient. 3 heaped  

    tablespoons.

    fresh or dried thyme finely chopped 2 tablespoons

    totally optional but  very common is adding finely grated carrot  into your mix,

    salt and black pepper , use lots of as they both are a must.

    1 fresh egg will make your mince stay together better but its really optional.

    a little extra virgin olive oil ( one /fifth of a cup)

    mix all the ingredients together into a bowl and refrigerate for at least one hour or overnight take it out and fry a tiny patty , if you are happy go ahead and cook  the rest , if not add more salt or pepper to your taste.



    this is a real authentic Greek mince recipe that will work great for hamburgers,   rissoles, meatballs and meatloaf, this is very much what you would find in Greece so to anyone out there that reads this i advice that you try it .


  2. GREEK HAMBURGERS  

    1 1/2 lb. lean hamburger

    2 tbsp. olive oil

    3 cloves garlic, minced

    3 tbsp. red wine (dry burgundy type)

    2 tsp. oregano

    2 tbsp. Dijon mustard

    Salt and pepper to taste

    Fried onions for topping

    Lettuce

    Sliced tomatoes

    Mix the hamburger with the following 6 ingredients. Cook as per your favorite method and top with fried onions on a toasted bun. We always add lettuce and tomatoes. Go easy on the mayonnaise, mustard, or relish. Makes 6 hamburgers.

  4. GREEK FETA BURGERS

    1 (10-oz.) package frozen chopped spinach, thawed, drained, and squeezed dry

    1 tbsp. lemon juice

    1/4 tsp. pepper

    1 egg white, lightly beaten

    3/4 lb. lean ground lamb

    1/2 c. crumbled feta cheese

    1/4 c. chopped fresh mint or 4 teaspoons dried mint flakes

    Cooking spray

    4 hamburger buns with onions

    1/2 c. diced tomato

    Cucumber-Dill Sauce (Recipe Below)

    Combine first 4 ingredients in a bowl; stir well. Add lamb, cheese, and mint; stir well. Divide mixture into 4 equal portions, shaping into 1/2-inch-thick patties. Prepare grill or broiler. Place patties on grill rack or broiler pan coated with cooking spray; grill 5 minutes on each side or until done. Place patties on bottom halves of buns; top each with 2 tablespoons tomato, 2 tablespoons Cucumber-Dill Sauce, and top half of bun. Makes 4 servings.

    For the Cucumber-Dill Sauce:

    1/4 cup diced seeded peeled cucumber

    1/4 cup plain low-fat yogurt

    1/2 teaspoon chopped fresh or 1/8 teaspoon dried dill

    1 small garlic clove, minced

    Combine all ingredients in a bowl, and stir well. Makes 1/2 c.
