Does anyone have or know a link to a recipe for vegan cookies.

A friend and I want to make some tomorrow.

  2. Mine typically come from cook books or just converting a non-vegan recipe to vegan. So I won't be writing the recipes. However, from experience I will tell you that Earth Balance does not do well in the oven for baked goods like cookies. They come out flat and too crispy. I used to use this Smart Balance kind that contained no whey or casein, but can no longer find it, so I am assuming no longer made. But my vegan sister told me, the whipped version of Earth Balance does better than the original, and the stick does the best, but with extra flavors that aren't always the best mix! So, if your baking come out less than desirable, do not blame them on being vegan!

  3. I went to a vegan restaurant and had macaroon cookies...it was just coconut flakes in agave nectar...Im pretty sure that was it, mixed so that they stuck together in little balls. But they were so freaking amazing. Im not even vegan. Easy, 2 ingredients, and no baking!  

  4. Chocolate Chip Cookies

    Ingredients (use vegan versions):

        3/4 cup raw sugar

        3/4 cup brown sugar

        1 cup vegan margarine

        1 teaspoon vanilla

        approximately 1/3 cup applesauce (enough to equal 1 egg)

        2 1/4 cups flour

        1 teaspoon baking soda

        1 teaspoon salt

        1-12oz bag vegan semi-sweet chocolate chips

    Directions:

    Heat oven to 370 Fahrenheit.

    Beat sugars, margarine, vanilla, and applesauce together in a large bowl.

    Stir in flour, baking soda, and salt.  (Dough will be somewhat stiff).

    Stir in chocolate chips.

    Drop by rounded teaspoonfuls onto a cookie sheet.  Bake for 10-15 minutes, or until light brown.

    Cool.

    Kick-*** Molasses Cookies

    Ingredients (use vegan versions):

        1 cup packed brown sugar

        3/4 cup canola oil or other form of melted shortening

        1/4 cup molasses

        3 tablespoon Ener-G Egg Replacer or other egg substituter

        2 1/4 cups unbleached all purpose flour

        2 teaspoon baking soda

        1 teaspoon ground cinnamon

        1 teaspoon ground ginger

        1/2 teaspoon ground cloves

        1/4 teaspoon salt

        3 tablespoon unbleached sugar

    Directions:

    Heat oven to 325 degrees. Mix brown sugar, oil, molasses, and egg substitute in a large bowl with an electric mixer on medium. You can also mix with a spoon but its better when its really whipped up. Stir in the rest of the ingredients except the unbleached vegan sugar.

    Make tablespoon sized balls of dough and roll in the sugar.  Then place 1-2 inches apart on ungreased sheet.

    Bake for 13 to 16 minutes or until set (appears dry). Let cool for 1 to 2 minutes and place on wire rack or a plate is fine as well.

    Chocolate Chip, Oatmeal, Walnut and Coconut Cookies

        *   1 cup margarine

        * 3/4 cup brown sugar

        * 3/4 cup sugar

        * 2 egg substitute (I like Ener-G egg replacer)

        * 1 teaspoon vanilla

        * 2 1/4 cups flour

        * 1 teaspoon baking soda

        * 1/2 teaspoon salt

        * 1/8 teaspoon baking powder

        * 1 cup chocolate chips (I am a fan of Sunspire and Tropical Source)

        * 1/2 cup rolled oat

        * 1/2 cup shredded coconut

        * 1/2 cup chopped walnuts

    Directions

       1. Cream together the softened margarine, sugars, egg replacer, and vanilla.

       2. In a separate bowl, mix the flour, salt, baking soda and baking powder.

       3. Add this to the creamed mixture.

       4. Stir in the remaining ingredients.

       5. Drop by spoonful onto an ungreased cookie sheet and bake at 375° for 14 minutes.

       6. Turn sheets around halfway through baking (and switch racks too, if baking more than one sheet at a time).

       7. Cool well before removing from sheet.
