  1. Lemon Nut Cookies

    Recipe courtesy Giada De Laurentiis

1 1/4 cups pine nuts, toasted

    1 1/2 cups all-purpose flour

    1/2 cup cornmeal

    1/4 teaspoon salt

2 sticks (1 cup) unsalted butter, softened

1/2 cup powdered sugar, plus 1 cup for rolling

    1 tablespoon fresh lemon juice

1 teaspoon lemon zest, plus 2 teaspoons

    1 teaspoon vanilla extract

In a food processor, pulse together the nuts, flour, cornmeal, and salt until finely ground and smooth.

Using a hand-held or stand mixer, beat together the butter and 1/2 cup powdered sugar in a medium bowl until light and creamy. Add the lemon juice, 1 teaspoon zest, and vanilla and beat to combine. With the mixer on low speed, add the dry ingredients in 3 batches until just combined; be careful not to over-mix. Chill the dough in the refrigerator for 30 minutes.

In a shallow bowl, combine the remaining sugar with remaining zest. Set aside.

Preheat the oven to 350 degrees F.

Roll the dough into 1 1/2-inch balls. Transfer the dough onto cookie sheets and bake until firm and very pale golden, about 12 to 15 minutes.

While the cookies are still warm, roll each cookie in the sugar mixture. To achieve a solid coating, roll each of the cookies a second time in the sugar mixture.

  3. I make this and its always a hit... hope it helps.

    Microwave Fudge:

12 oz. chocolate chips or baking squares

1  14 oz can sweetened condensed milk

    1 tsp vanilla

1 cup of chopped nuts (optional)

    1   8 x 8 pyrex pan (or similar size)

First thing line the pan with plastic wrap so that the bottom and sides are covered.

Combine milk and chocolate in a microwave safe bowl.  Set microwave for 3 minutes.  After 1 1/2 minutes take the bowl out and mix with a spatula.  If the chocolate looks like it will completely melt then it is done.  If not put it back in for the rest of the time.

When it is done add the vanilla and the nuts and pour into the lined pan.

I put mine right into the freezer to cool for about an hour.  Then store in the refrigerator.

People at work love it, and it is completely easy to make.

    Enjoy

    Two:

Peanut Butter and Honey - Quick and easy.  Just whip it and spoon feed yourself :)

    Third:

Place a sheet of wax paper on a cookie sheet.

Take any white chocolate, dark chocolate, milk chocolate chips and melt in a pan.  Use a teaspoon of crisco to make it smooth.

Once it's melted, use pretzels, peanut butter, nuts of any kind, hard candies, fruit... and then drop on wax paper. graham crackers, cereal,

A little marshmellow creme or marshmellows...

I always took peanut butter, spread it on premium crackers and laid on wax paper and then scooped the melted chocolate over then and froze them.  the kids loved them when they came in from school.

    Fourth:

Brownies:  Any dollar store has them for $1.00 and you could just make it cheaper than using your own ingredients.
