  1. Baked Ziti

    1 T Olive Oil

    ½  lb. lean ground beef

    1 Cup chopped onion

    2 garlic cloves, minced

    26-30 ounces jarred marinara sauce (prefer home made)

    1 8 ounce can tomato sauce

    1 tsp dried oregano

    16 ounces Ziti – cooked 8 minutes and drained

    15 ounces ricotta cheese

    2 cups shredded mozzarella cheese, divided

    ½ cup grated Parmesan cheese

    In a large skillet heat oil over medium high heat, add beef, onion and garlic. Cook 3 minutes, stirring frequently. Stir in spaghetti sauce, tomato sauce, and oregano. Bring to a boil, then remove from heat.

    Combine 1 cup sauce mixture with the ziti. Spoon half of the ziti mixture into a sprayed 9 x 13x 2 casserole dish; top with all the ricotta, 1 cup mozzarella, 1 cup sauce, remaining ziti mixture and remaining sauce.

    Cover and bake @ 350 for 20 minutes. Sprinkle with the remaining 1 cup mozzarella and the Parmesan. Bake uncovered 20 minutes longer or until heated through.

  3. i think alfredo is italian. i make spaghetti noodles, then for the sauce i use like, a cup and 1/2 of cream, and stir in salt, parmesian cheese, and pepper, until its thick and creamy, but not chunky. should be smooth. yummy.

  5. Andrea has made the perfect suggestions. For simple Italian dishes. you can't get any better meal on a hot summer day (or any day) than a Caprese with fresh basil, and ahhh the wonderful flavour of a late night meal of spaghetti aglio, olio e peperoncino.  Simple and simply delicious.

  10. Spaghetti ala Carbonara!

    Ingredients

    2 tablespoons coarse salt

    1/2 medium onion, finely chopped

    4 ounces guanciale, pancetta, or American bacon, cut into 1/4-inch cubes

    1 pound very thick spaghetti

    1/2 cup freshly grated pecorino cheese

    4 large eggs, separated

    4 tablespoons freshly ground pepper

    Cooking Directions

    Bring 6 quarts of water to a boil; add salt. Meanwhile, in a 12-inch saute pan, cook onion and guanciale over medium heat until both are translucent, 8 to 10 minutes.

    Add spaghetti to the boiling water, and cook according to package instructions, until tender but al dente. Drain. Add the hot pasta to the saute pan, and toss over medium heat until coated. Add 1/4 cup cheese, and stir. Remove from the heat, and vigorously stir in egg whites.

    Divide the pasta among four plates, and top each serving with one yolk.

    Sprinkle with the remaining 1/4 cup grated cheese and the pepper. Serve immediately.

    Yield: 4 servings

    55 min | 25 min prep | SERVES 4 2  tablespoons extra virgin olive oil  

    10  ounces button mushrooms  

    1  yellow onion, chopped  

    2  teaspoons garlic, pureed  

    salt and pepper  

    1  lb chicken b*****s, cut into 1 to 1 1/2 inch pieces  

    1/2  quart chicken stock  

    2-4  ounces marsala wine (Cribari)  

    2  ounces white wine  

    1/2  quart heavy cream  

    1  lb rigatoni pasta  

    1  tablespoon fresh basil, chopped (and parsley mix)  

    2  tablespoons parmesan cheese, grated  

    2  ounces garlic butter  

    parmesan cheese, shavings (garnish)  

    chopped fresh parsley (garnish)  

    Heat oil.

    Sauce mushrooms, Spanish onion and garlic. Brown lightly.

    Season with salt and pepper.

    Add chicken.

    Add chicken stock, Marsala, and white wine. Cook until reduced by half.

    Add cream and bring to a boil.

    Turn down heat and simmer to skim away any impurities.

    Cook rigatoni al dente.

    Add drained rigatoni to chicken mixture in pan and finish with basil-parsley mix, parmesan cheese, garlic butter, and salt and pepper.

    Add more Marsala for flavor as needed.

    Place in pasta bowl and garnish with parmesan shavings and chopped parsley.

    Bruschette: slice of bread, crunch by fire with olive oil and oregano.

    Spaghetti aglio olio e peperoncino: Spaghetti whit olive oil, garlic and hot pepper.
