  1. Well I was gonna suggest mostly salad type things since it is a picnic. Like tabbouleah salad or mock egg salad made from tofu or mock chicken salad stuffed into veggies. Grilled teriyaki tofu and vegetables. These can be made in packets for a pretty presentation. Watermelon and other fruits like strawberries and cherries, Grilled or bolied corn on the cob with seasoned olive oils make your own with chili powder and/ or roasted garlic and let guests add their own salt and pepper. Potatoes with fresh herbs and garlic. Marinated Cajun mushrooms, sautee mushrooms in olive oil and add vegan worchestireshire sauce and tabasco with some black pepper and serve at room temperature. Corn bread and a pot of beans. Strawberries with a fondue pot of melted chocolate.

  2. no picnic is complete without:

    big fat juicy hot dogs

    T-bone steak

    Milk

    sunny side up's

    lots of bread and

    fried Chicken!!!

  3. I know you said no salad, but this isn't a green salad it's a Greek Lentil Salad:

1 cup green or brown lentils, picked over and rinsed

1-1/2 cups cherry tomatoes, sliced in half (or regular tomato diced)

    1 cup diced cucumber

    1 cup chopped green onions

1 Tbs. dried dill OR 1/3 cup fresh chopped dill

    Dressing:

    1-2 garlic cloves

    1/2 tsp. salt

    1/2 cup olive oil

    1/4 cup lemon juice

    1/4 tsp. ground black pepper

Here's how you throw it together:

-Place lentils in saucepan and cover with water. Bring to a simmer, then reduce heat to med.-low and cook, partially covered, 25-30 minutes or until lentils are tender. Drain excess liquid, if needed.

-To make dressing: place garlic cloves on cutting board. Sprinkle with salt and mash with the side of a knife into a paste. Transfer to a bowl and whisk in olive oil, lemon juice, and pepper.

-To make salad: Toss lentils in dressing. Cool to room temperature, then stir in tomatoes, cucumber, green onions, and dill.

-Add more salt and pepper, if desired.

Since it's summer you should take some fresh fruits. Take crackers or raw veggies and hummus or salsa.

Black Bean dip (or filling for tortillas):

1 can black beans (washed and drained)

    olive oil

    garlic

    white pepper

    cumin

1/4 cup of dry white wine (optional)

Heat mixture of olive oil, garlic and herbs (add to taste).

Add Black Beans, cover, and simmer for 5 minutes. In blender, puree black beans and add wine. Serve with crackers, toasted pita bread, tortilla shell.

  6. It is indeed a full moon tonight.

Here's a raw recipe I got at a food demo at my local Whole Foods:

    For the "pasta":

    2 7-inch zucchini

    1 small bell pepper

    1/4 C fresh basil, chiffonade

    For the sauce:

1/2 cup tahini (or any nut butter)

    2 tsp ginger, finely grated

    1/4 cup lime juice

1 tbsp sesame oil (raw, if you can get it)

2 tbsp tamari or nama shoyu

1/2 tsp chili flakes (to taste)

    1 tbsp maple syrup

    2 tbsp water

    Garnish:

    black sesame seeds

    sliced green onion

Cut the zucchini in lengths just long enough to fit in the food processor tube horizontally.  Grate horizontally to create "noodle"-shaped pieces.  Core and slice the bell pepper in long strips to match the shape and thickness of the zucchini.  Cut the basil in chiffonade, meaning, you roll up several leaves and thinly slice across the width.  Mix all the veggies together.

In a small bowl, combine all the dressing ingredients to make a thick sauce.  You want it thick enough to coat the noodles, but not too thick.

Pour the sauce over the noodles, sprinkle with the garnish, and serve.
