Sticking the throttle?

i watch stunt riders stand on their tank and accellerate, do they some how stick the throttle intentionally, how do they avoid the engine braking?

No, sometimes they just isle the engine up before they do the stunt show so the engine can keep up to speed by itself. Sometimes the stunt riders do different methods but that's what the majority of them do.
