hey i am having a tea party with my friends for back to school and i wanna know what to do or when to do it. so i need a checklist!! thanks in advance.

You want to serve tea sandwiches with your teas (make sure you have some teas iced). Also, if you have a good local bakery, pick up a box of Petit Fours (tiny individual cake squares).

Here are a few Tea Sandwich recipes:

Almond Chicken Salad Sandwiches

Spread: Combine 3/4 cup butter, 2 teaspoons lemon juice, a pinch of salt, and 1/2 cup fresh basil leaves or 2 tablespoons dried basil.

Filling:

1 cup finely chopped cooked chicken meat

1/2 cup mayonnaise

1/2 cup slivered almonds

Salt and pepper to taste

20 slices bread, your choice

Combine the filling ingredients. Spread each slice of bread with a thin layer of the butter mixture. Add the filling to half the bread slices and top with the other half, buttered sides in. Remove the crusts and cut the sandwiches as desired.

Makes 40 tea sandwiches.



Cucumber Sandwiches

Cucumbers

Thin sliced white bread

Whipped cream cheese or unsalted butter softened

Salt

Peel cucumbers and slice very thin. Sprinkle the slices with a little salt and lay on paper towels to drain. For each sandwich spread a little cream cheese or butter on two slices of bread. Layer the cucumber slices on one slice of bread (no thicker than 1/4 inch) Cut crust off sandwiches and then cut into squares, triangles or other fun shapes using cookie cutters.



Ham and Apricot Preserve Tea Sandwiches

Makes 8 tea sandwiches

4 thin slices raisin-pumpernickel bread

2 tablespoons apricot preserves

1 tablespoon Dijon mustard

1/4 pound Virginia ham, thinly sliced

Spread one bread slice with half of the preserves.

Spread another slice with half of the mustard. Fill with half of the ham slices and close.

Repeat using the remaining bread, preserves, mustard and ham. Trim the crusts from the 2 sandwiches.

Cut each into 4 finger sized sandwiches.
