  1. This is my favorite way to eat fish! put the fish in the center of a piece of foil. Top with thin slices of lemon, red onion, tomato, capers and basil. It tastes for fresh and is so easy to do . I throw it on the bbq with the lid closed for 5-7 minutes.

  2. Chicken/Fish Pockets.

On a oiled piece of foil lay out:-

    1 chicken breast/Fish fillet

    Sliced onions.

    Sliced mushrooms.

    Sliced tomatoes.

    Sliced capsicums.

    Seasonings, S & P

Fold tinfoil into a pocket, edges well crimped and bake in the oven at 180C (350F) for 25-30 minutes.

Serve with baked or roasted potatoes.

Serve on the foil, or transfer to plates.

You could throw them on the grill.

Add finely sliced potatoes if you don’t want to bake them.

  3. ,If you also have fresh ginger & soy sauce this is a good easy recipe.

place fillet in foil , season w/ a little sea salt & pepper ,grate ginger to lightly cover fish saturate w/ soy sauce fold  into foil packet bake at 350 until fish is cooked through. moist & delicious
