Tomatoe sauce trouble?

this time i used too much basil. what could i have done?

  1. add a little sugar to counteract the bitterness of the herb


  2. Take some out or like she said kill it with garlic always try something new or different ways

  3. Add a touch of cream, some parmesan cheese, and a splash of red wine. If you don't want to make the sauce with cream, just add the cheese and wine...simmer lightly. This has happened to me before as well and those flavours just add a nice balance.

    Be careful about adding sugar. Basil is already sweet. Sugar in tomato sauce is good for cutting the sharp acidic flavour.

  4. Remove a portion of your sauce and add more tomato sauce...

  5. I don't think you can ever use to much basil. Kill it with garlic.

  8. Spicy Italian sausage! Saute some more onions and add (they add sweetness) Peppers (red and/or green)! Up the ante! Up the Bastille!  (sneak in a touch of anchovy to mellow it out)...be not afraid. Even adding a little more Extra Virgin Olive Oil and tossing your pasta more lightly and shredding generously with fresh Parmesan Reggiano will balance it out.

    Hey, skip the sausage if your a vegetarian...course.

  9. You can only use too much basil in a Northern Italian sauce.

    Anywhere else, in a Southern Italian sauce, you can add a small amount of sugar, stewed tomatoes and a bit of seasoned salt, a little lemon juice and some garlic salt and sauteed brown onion.

    All these will "lighten" the sauce; so would a small amount of

    heavy cream, additional meat, or a few other things.  But the key is; "What does basil add?"  It is basically half and half sweet and bitter; so if you use too much of it, add more sweeteners to undo the bitter additions.
