Upgrading a bike - a few ???s

I'm looking to completely upgrade my road bike.

I have a Schwinn Caliente... I originally was going to get a new bike, but I love the frame, so I'm keeping mine.

My father used to be the one to buy new stuff for it, but I'm on my own now... and I have a few questions.

I only have around $800 or so to spend.. maybe up to a grand...

I already know which pedals I want... and I already know which shoes I have to get to work with them...

My main question is about the tires.

I really like the Soma Everwear tires http://www.somafab.com/tires_ev.html... but they only come in one size it seems... what does that mean??

Also, can I get everything upgraded for that budget... I can keep the handlebars and brakes... and possibly seat... but I want the chains and the gears and the cranks all swapped out... and the tires...

Tires are cheap.  Chains are cheap.  Derailluers are cheap.  A decent crankset is about $150.   I'd say the total for these items would be under $400.   Looks like the tires you mention come in 23 or 26 widths.  And I agree; Panaracer makes really good tires.

I am one of those that absolutely love old bikes and would do almost anything to keep riding them, but I also know that there is a time to abandon my desire for keeping old stuff.

Unfortunately, now is the time for you.

Keep your Caliente (HOT!) and look for a new road bike in your price range. You can get a pretttty good bike for $800-1000 without too much grief. Practically everything on your bike is obsolete and the frame would need to be reset and updated to accept most new stuff. This will ruin the feeling you have come to know with the bike.
