Using curry leaves?

I bought curry leaves for a dish I made but I always end up wasting the curry leaves I don't use....anyone have SIMPLE (emphasizing simple) recipes I can use curry leaves with....they can be desi recipes too, dnt mind....

While they are at there best fresh, I dry mine and store them without the stems in a sealed jar and crumble them into saag, paneer and dals when I make them, like dried cilantro they have more a citrusey sharp taste than when dried, like all dried herbs and spices they tend to get either stronger or weaken with drying, curry leaves are one there is very little change in, I place mine on a paper plate and leave them on top of my refrigerator near the back for 2-3 days and they dry up nice that way, would save you money and have curry leaves there when you need them in both forms.

  3. I usually freeze my leftover curry leaves, which isn't as good as fresh but better than throwing them away or not having them when you want them.  You can also fry them up crisp and keep them covered to add to dishes.

    I often saute them in butter with onions and mustard seeds before I make eggs or any stir fried veg.

    If you fry them crispy, you can crush them and sprinkle them over chips--yum!
