Question:

VEGANS only please!?

I am about to graduate high school from independent study, to go to culinary school in San Francisco to train to become a Veagan Baker. To thank my teacher, who has been amazingly supportive through my time with her, I really would like to bake her something amazzzing and vegan.

I would love some suggestions or recipes!

  4. Grilled portobello mushroom and veggie fajitas

    3 T. balsamic vinegar

    3 T. olive oil

    2 T. freshly chopped parsley

    1 T. garlic, minced

    1/4 t. salt

    1/8 t. freshly ground black pepper

    4 medium portobello mushrooms, washed well, and patted dry

    2 red onions, sliced

    2 red or orange peppers, destemmed, deseeded, and cut into quarters lengthwise

    2 green peppers, destemmed, deseeded, and cut into quarters lengthwise

    2 jalapeno peppers, destemmed, deseeded, and cut in half lengthwise

    4 - 8-inch flour tortillas

    1 recipe Green Chiles and Almond Cream, optional



    In a large bowl, place the vinegar, olive oil, parsley, garlic, salt, and pepper, and whisk well to combine. Add all of the vegetables and toss well to thoroughly coat the vegetables with the marinade. Set the vegetables aside and allow them to marinate for 15 minutes. Place the vegetables on a hot grill and grill for 3-5 minutes per side or until tender. Transfer the grilled vegetables to a cutting board and cut them into strips. The tortillas can be warmed on the grill, if desired. Transfer the vegetables to a platter for service. Allow guests to build their own fajitas by filling tortillas with the grilled vegetables and topping them with a little of the Green Chiles and Almond Cream, if desired.

    *Note: the vegetables can also be cooked under the broiler for 3-5 minutes per side or until tender.

    Green Chiles and Almond Cream

    1/2 cup raw almonds

    1 T. nutritional yeast flakes

    1/2 t. garlic powder

    1/2 t. chili powder

    1/2 t. ground cumin

    1/4 t. powdered kelp

    1/4 t. salt

    1/2 cup safflower oil

    1/4 cup water

    1 T. apple cider vinegar

    1 t. lemon juice or lime juice

    1 - 4 oz. can diced green chiles

    2 T. freshly chopped cilantro



    Begin by blanching the almonds: in a small saucepan, place 2 inches of water, and bring to a boil. Add the almonds and cook for 1 minute. Remove the saucepan from the heat and set aside for 3 minutes to cool. Remove the almonds from the water, squeeze each almond between your thumb and forefinger to remove the skin, and set them aside for 5 minutes to dry and cool. Place the almonds in a blender or food processor and process for 1-2 minutes to finely grind them. Add the nutritional yeast, garlic powder, chili powder, cumin, kelp, and salt, and process for 30 seconds to combine.

  5. Vegan Black Forest Gateaux

    225g (9 oz) self raising flour

    150g (6 oz) caster sugar

    25g (1 oz) cocoa

    1tsp baking powder

    pinch of salt

    1-2tsp natural vanilla essence

    A few drops of white wine vinegar

    100ml (4 fl oz) vegetable oil

    200ml (9 fl oz) water

    Other Ingredients

    340g/12oz (1 pack) soft tofu

    100g (4 oz) dark chocolate

    1 tbsp caster sugar

    2 tbsp vegetable oil

    1tsp vanilla essence

    1 tin of cherries

    Splash of kirsch (optional)

    Chocolate curls (optional)

    Instructions

    Cake Instructions

    1) Put self-raising flour, baking powder, salt, sugar, and cocoa in a bowl and mix well.

    2) Pour over vegetable oil, vanilla essence and vinegar, and then the water.

    3) Mix well, and pour into two round lightly greased/non-stick 8" sandwich tins.

    4) Cook for about 25 minutes at 200ºC/400ºF until cooked.

    Other Instructions

    1) Melt the chocolate in a bowl over a pan of simmering water.

    2) Blend soft tofu, melted chocolate, sugar, oil and vanilla essence until smooth.

    3) Pour into a bowl and chill until the cake has cooled down.

    4) Sandwich cakes with mousse and spread the rest on top. Garnish with cherry halves (soaked in kirsch) and chocolate curls.

  6. I'm sorry I'm not vegan, but I hope you'll accept a vegan recipe.

    You can easily make fruit pies vegan. Use Crisco for the crust and vegan margarine instead of butter inside.

    Prefer something savory? Try focaccia. It's great with garlic, rosemary, sundried tomatoes, and olive oil.

    Or you could dig up a copy of Vegan Cupcakes Take Over the World. The title says it all.

    Congrats on your graduation. And you're so sweet to thik of your teacher!

  8. Make a great tofu cheesecake using toffuti better than cream cheese

    or use silken tofu to make a carrot cake

  9. Vegan Rice Krispie Treats

    1 Cup of Ricemellow

    1 1/2 tsp of vegan butter

    3 Cups of Puffed Rice Cereal

    Melt the ricemellow and vegan butter together until it is completely melted. Then put in the rice cereal and mix it fast. Then put the mixture in a pan and press it down into a rectangle. Let it cool for a bit and then enjoy!
