Question:

Vegetarian lunch ideas?

I need to figure out some healthy vegetarian lunches to bring to school - I've done egg salad to death, and recently I've just been bringing those cups of chili or noodles. I don't have access to a freezer, but I do have a fridge and microwave.

The key is something fast and easy to prepare, because I don't have time in the morning to do anything like roast vegetables or put together fidgety wraps. (I'm willing to do *some* work, of course, but I'd prefer it to be minimal)

Also, I'm trying to keep my lunches under 400 calories, so high-fat sandwich fillings like peanut butter are out.. I'm really scrambling for ideas!

*I do eat cheese, eggs, and milk, as well as fake-meat products

  1. Forget the "Wraps" and just get PITA pockets. Stuff 'em up and go!!!  


  2. hummus is god-sent.

    it's healthy, easy to digest, gives you energy, and filling.  

    you can put it on a whole wheat pita and add in whatever you'd like.

    throw in some hard boiled eggs for some extra protein.

    maybe some fresh figs for the natural sugars for the rest of the day

    and you're set

  3. i love making vegetarian sandwiches with lots of fresh veggies.

    Get whatever kind of bread you like and get some avocados and mash them up and put some garlic powder, onion powder , and little lime to help it not to turn brown. Then slice up all of your favorite veggies.

    I prefer sliced cucumber, red, green bell peppers and lettuce, tomato's .

    This sandwhich fills me up and it's real healthy to eat, plus it's pretty much has free calories. Then you spread the avocado on the bread and use it like it was mayo or mustard , then put all your veggies on the bread and there ya go. Or you can put hummus instead of avocados.

  4. frozen bean and cheese burritos are my favorite!  also a veggie sandwich with bread,  cheese, veggies, condiments.  Also make a veggie rice stirfry at night and take leftovers with you!  the possibilities are endless! :)

    Tip:  Any frozen foods you buy you can put in the fridge for about 8 hours and they are still good, and cook faster!

    (burritos, lean cusines, etc..)

  5. I know what you mean, I lived off vegemite sandwhiches for about a year at school.

    I usually go with simple sandwhiches like tomato and cheese with pepper on whole grain bread. But recently I've been taking the vegie soup that come in the containers and microwaving it, so quick and good with grainy bread.  

  6. A peanut butter and jelly sandwich works well for vegetarians.
