Vegetarian (no fish) recipe?

My brothers friend is coming across the country for a week, and shes a vegetarian. Any good recipes?

    2 Zucchini roughly chopped

    2 Yellow Squash roughly chopped

    8oz. Sliced Mushrooms

    1 Onion

    Shredded Cheddar Cheese

    Preheat oven to 350. Place all the vegetables into a baking dish and ad your favorite seasonings. Dot with some butter or margarine. Baked for 45 to and hour or until the vegetables are tender. Melt some butter or magarine and combine with the bread crumbs. Then ad the shredded cheese to the mixture and top the casserole 15 minutes before it is completely done. Bake for the remaining 15 minute or until the top is golden brown.

  6. Kung pao eggplant is my favourite. There's a " Kung Pao Chicken" mix. I don't know what brand it is, but it's veg friendly, and then you cook up some eggplant and mix it all together.

  8. LENTIL CASSEROLE

    2-2/3 cups water

    3/4 cup lentils, uncooked

    1/2 cup brown rice

    2/3 cup onion, chopped

    1/2 sweet green pepper, cored, seeded, and finely diced

    1-1/4 cups white wine

    2 cloves garlic, well chopped

    1/2 teaspoon basil

    Salt and pepper to taste

    1/4 teaspoon oregano

    1/4 teaspoon thyme

    Combine all of the ingredients (except the cheese) in a large bowl.

    Pour the mixture into a 1-1/2 quart casserole. Place the casserole

    (uncovered) into the oven (350 F) and bake for 1-1/2 to 2 hours.

    Remove when the casserole is moist but not runny.

  11. I love these recipes. They are wonderful (and full of protein, with no meat, fish, or poultry)

    RIGATONI COMBINATION

    1/3 pound rigatoni or other pasta

    1 onion, chopped

    1 clove garlic, minced

    1/2 green pepper, chopped

    1 teaspoon olive or vegetable oil

    1 small can tomato sauce

    1 pound can kidney beans, drained

    1 teaspoon soy sauce (optional)

    1/4 teaspoon salt (optional)

    1/2 teaspoon chili powder

    Black pepper to taste

    Cook pasta according to package instructions. Saute onions, garlic, and green pepper in oil 4-5 minutes or until soft. Stir in tomato sauce, kidney beans, soy sauce, salt, chili powder, and black pepper. Simmer several minutes. Drain pasta when done and stir into sauce. Serve as is, or add 1/2 Cup crumbled tofu or low-fat cottage cheese to each serving to make a lasagna-like dish. Add hot sauce if desired. (Decrease fat content -- saute in water instead of oil or just brush the pan lightly with an oiled paper towel.) Serves 4.

    GARBANZO BEAN BURGERS

    2 cups cooked garbanzo beans (chickpeas), mashed

    1 stalk celery, finely chopped

    1 carrot, finely chopped

    1/4 small onion, minced

    1/4 cup whole wheat flour

    Salt and pepper to taste

    2 teaspoons oil

    Mix the ingredients (except oil) in a bowl. Form 6 flat patties. Fry in oiled pan over medium-high heat until burgers are golden brown on each side. Serve alone with a mushroom or tomato sauce, or as a burger with lettuce and tomato. Makes 6 burgers.

    General Tao’s Tofu

    1 box of firm tofu

        egg substitute for 1 egg

        3/4 cup cornstarch

        vegetable oil for frying

        3 chopped green onions

        1 Tablespoon minced ginger

        1 Tablespoon minced garlic

        2/3 cup vegetable stock

        2 Tablespoons soy sauce

        4 Tablespoons sugar

        red pepper to taste

        1 Tablespoon sherry (optional)

        1 Tablespoon white vinegar

        steamed broccoli

    Directions:

    Drain, dry and cut tofu into 1 inch chunks.  You can freeze tofu the night before to get a more chicken-like consistency, but it isn't necessary.  Mix the egg replacer as specified on the box and add an additional 3 tablespoons water.  Dip tofu in egg replacer/water mixture and coat completely.  Sprinkle 3/4 cup cornstarch over tofu and coat completely.  Watch out that the cornstarch doesn't clump up at the bottom of the bowl.

    Heat oil in pan and fry tofu pieces until golden.  Drain oil.

    Heat 3 Tablespoons vegetable oil in pan on medium heat.  Add green onions, ginger and garlic, cook for about 2 minutes.  Be careful not to burn garlic.  Add vegetable stock, soy sauce, sugar, red pepper and vinegar.  Mix 2 Tablespoons water with 1 Tablespoon cornstarch and pour into mixture stirring well.  Add fried tofu and coat evenly.

    Serve immediately with steamed broccoli over your choice of rice

    Beans and Rice: The BEST RECIPE

    Ingredients (use vegan versions):

        1 can of organic black beans (Eden, Shari Anns,etc.)

        1 small onion

        half of red or green pepper (whichever you prefer) (or a little of each)

        half of a small (8 oz) can of Hunts Tomato sauce (Hunts is vegan)

        olive oil

        salt and pepper

    Directions:

    1. Cut up the onion into small pieces, along with the pepper.

    2. Saute in a small-medium sized pot, with some olive oil you can just drizzle enough on the onion and pepper to cover, or you can measure out in tablespoons, its according to how much oil you want to use)

    3. Add at least 1/4 of salt ( I use sea salt) or more

    4. Add pepper (I usually just use a pepper shaker and shake it about 10 times, sometimes more) Saute on low heat until veggies are soft

    5. Add half a can of tomato sauce, followed by can of black beans. Let it come to a quick boil, then reduce heat to low or simmer. The longer you let it simmer, the more flavorful the dish. Stir occasionally.

    *You can use any kind of beans, I just prefer black beans Serve with rice. Enjoy.

    *This is a simple dish.  You can adjust any of the ingredients according to taste!

    Just so you know: Some of these have vegan substituties. You can use normal eggs and milk. General Tao's  Tofu is my favorite. Hope I helped! :)

  12. First, ask her what she likes. As a vegan, I'm flattered when non-vegetarians ask what I like. You did get some good suggestions here. Also, if she eats eggs and dairy, then you can essentially make whatever you eat without meat. You might find that even food without dairy and eggs and meat are easy to  make. Also, try these sites:

  13. nothing is tastier than a veggie lasagna! i dont have a recipe.. but just make it how you like it, omit the meat and get the good cheese. you said that your friend is vegetarian and not vegan so cheese it up!

  14. Pasta is something most people like, stir fries with tofu are nice..don't do lentils or aubergines, because she might not like it, and I am personally also fed up being served beans and lentils everywhere I go.

    I also hate all these squash soups and veggie/bean burgers people tend to serve to vegetarians..maybe you should ask your brother if he knows a few of her favorite meals.
