Question:

Vegetarian tortellini?

Does anyone know what national brand of cheese tortellini uses no animal rennet? I don't care if it's frozen, dry or refrigerated.

  2. TX2step:  cheese obviously has animal derivatives, but what she is asking about is rennet.  rennet is an enzyme taken from the stomachs of slaughtered cows that is used for coagulation in cheese.  rennet-free cheese is suitable for vegetarians, just not vegans.

    la vie boheme:  i'm sorry, i haven't found any yet that are listed as vegetarian.  usually what we do at my house is just make a regular pasta and then put it in a casserole dish with the sauce we're using.  then we cover it with sargento brand ricotta (which is a vegetarian cheese) and sargento brand mozzarella.  then we put it under the broiler and let the cheese cook and bubble up. it's a nice substitute, which i guess is more like baked ziti but you get the point =)
