Stay away from big cities like Rome, Venice, Florence, etc. Are you big into the beach? Try places like Sicily (I loved Syracuse) or the Adriatic Coast. Into mountains? Try one of the smaller towns of Lake Como or Lake Maggiore. Wine tasting? Tuscany and Umbria are both beautiful, and affordable options do exist!

I suggest getting an Italian travel guide (the Rough Guide to Italy is my favorite), find a few places that intrigue you, and go from there.
